Ch. La Caussade botrytis sémillon 2021 (375ml)From what might be termed a "Sauternes Satellite" region, St Croix du Mont wines are lovely. Still the same style as its big brother, but most don't have any oak ageing, as here. Just the marmalade richness of botrytis, with the balancing acidity of smillon and Sauvignon Blanc. The classic match with tarte au citron.

Perfect with oysters - I've done the research - and other simply prepared raw or lightly cooked seafood

Ideal with meat based pasta sauces

this ticks all the Margaret River boxes for chardie: Mid-weight fruit

and a dash of wet stone minerality

Cherry and raspberry dominate the palate

and silky smooth tannins in the mouth

Looking for a white wine with some weight but no oak

crisp character with heaps of minerality will astonish anyone used to the richer

It translates as "red stemmed refosco" and produces a red that just makes it into fuller-bodied

in much the same way that Champagne ages on the yeast in bottle - but on a much larger scale

Something of a dark horse winery
